Healthy looks Delicious

I am on the hunt for new recipes that are healthy AND delicious. Specifically baked goods with less sugar, breakfasts that fuel our day and dinners that are filling without being carb heavy. Overnight Oats are nothing new as they have been trendy online for years BUT I have experimented with various recipes and finally landed on my favorite. I want to celebrate my success by sharing my recipe with you. They are creamy and delicious, a healthy way to start your day and best of all you can throw them together in minutes.

Celebration {Overnight} Oats

This recipe is for a single serving. Make them in any container with a lid – ideally microwavable so you can just heat and eat in the morning.

oatsIngredients

1/2 cup rolled oats (not the quick ones)
1-2 tsp cinnamon (I also like using apple pie or pumpkin pie spice blends from Epicure)
1 tbsp ground flax seeds
1/4 cup plain greek yogurt
1 tbsp almond butter
2 tbsp dried cranberries
1/2 small apple, grated with skin on
2 tbsp crushed raw almonds

In your container put oats, cinnamon, flax, yogurt, almond butter, cranberries, grated apple and 1/4 cup water in and stir together until well combined. Place in the fridge covered overnight. In the morning add 1/4 cup water, stir and heat in the microwave 2 minutes (stirring after 1 minute). Sprinkle with almonds and serve. Enjoy with large cup of Starbucks coffee 😉
